This vegetable soup (with artichokes, cauliflower or broad beans) originates from the salvaging of the semolina, prepared for couscous, that turned out badly. The French origins of this dish are said to lie in its name: “flasque”, meaning soft. It should have a thick consistency and an exceptional sauce: vegetable, lobster or fish soup broth. These latter variations have made the dish an ambassador for the Aegadian Islands.
