This category comprises the various products derived from tuna processing: tuna in olive oil, tuna offal, ventresca (tuna belly), tuna salami or “ficazza”, tuna heart, tuna bottarga and other varieties.

A firm favourite with everyone is undoubtedly bottarga, an ancient and delicious delicacy made from dried tuna roe, which lends a unique and intense flavour to dishes.

The tradition of tuna products is still deep-rooted in those places with an ancient tradition of tuna fishing, such as the Aegadian Islands, especially Favignana.
