These “cassatedde” – traditional ravioli from the west of Sicily, notably the Agro Ericino area – have a strong flavour. Made with local products, such as the sheep’s milk ricotta used to stuff them and the meat broth in which they are usually cooked, they are best served with a sprinkle of pecorino cheese. It is a rustic dish, but one that particularly embodies the flavours of an authentic territory.
