A fragrant summer delicacy, this granita is made during the flowering season of white jasmine. In Sicily, between Palermo and Trapani, there are numerous recipes of Arab origin that involve the use of this flower. In Trapani, the tradition of this refreshing dessert has been maintained for centuries.
Its preparation involves picking the flowers at sunset and preparing them for maceration in water, which absorbs all their aroma. The flavoured water is in fact the main ingredient of the syrup used to make the granita, to which a cinnamon stick and lemon juice are added.
This pure white granita, eaten for breakfast in Trapani, goes well with a brioche or aniseed biscuits.
