The historic centre dresses up for the festival and people from all over come to taste steaming dishes, in a setting full of art, history, and architecture that characterises the beauty of the ancient village of Salemi. Music, dancing, and singing delight the evenings dedicated to the festival. A not-to-be-missed appointment to enter into the fullness of an iconic gastronomic tradition of our territory.
To give the ‘Busiata’ its shape, a branch of buso or disa is used, the latter being the stem of a plant that is part of the grasses. The buso is placed on the strip of dough and slid along it, until it forms the characteristic spiral shape of busiate.
